Fried Bean Sprouts (Toge Goreng) is a very savory Javanese Indonesian vegetarian dish, made by frying bean sprouts (green bean sprouts) with a little hot water, plus sliced ??tofu, as well as sticky rice and yellow noodles, doused with thick, savory gravy made from oncom (tofu). Fried bean sprouts are a typical Javanese food in the city of Bogor, West Java, Indonesia. Usually served as street food, sold using carts by street food vendors. This food is one of the popular roadside snacks in Java, Indonesia, especially in the cities of Jakarta, Bogor, Bandung and other areas of West Java.

The History of Fried Bean Sprouts and Its Relationship with Admiral Cheng Ho.
In one plate of fried bean sprouts, almost all of them use Hokian terms, and the cauldron where fried toge is cooked still uses a cauldron with ornaments bearing the lion symbol, and a typical Chinese bird whose appearance came from Chinese trade in Java in the past era.

Fried Bean Sprouts was born from the pattern of association between Chinese, Javanese and Europeans, Europeans have spaghetti, and the spaghetti menu was brought to Indonesia, for the tongues of local Indonesian Javanese and Chinese Peranakans, the sour tomato spaghetti sauce was not suitable. Especially for the Javanese tongue when brought to Indonesia, in China they did the same thing before coming to Java, the Chinese had noodles that were similar to spaghetti, then sour bean sprouts, and tofu as a substitute for meat. And you also need to know, that Sprouts were a mandatory food ingredient during Admiral Cheng Ho's exploration of Java, and Admiral Cheng Ho brought a lot of fresh bean sprouts and planted them on ships to provide nutrition and also medicine for his soldiers, That's why only a few soldiers from  Admiral Ceng Ho who died of illness, compared to European sailors.

Admiral Cheng Ho's exploration period, after the 15th century had a major influence on culinary acculturation in Java, over time, the spread of fried bean sprouts to the coast of Java, the western part of Sunda, which includes Pandeglang and Banten.
