Twisting Satay (Sate Lilit), is a satay variant originating from Bali. This satay is made from various types of meat, some from pork, fish, chicken, beef, or even finely chopped turtle meat, then mixed with grated coconut, coconut milk, lime, onion, and pepper.
The spiced minced meat is glued to a bamboo, then grilled over a blazing hot charcoal, unlike other satay made with narrow and sharp skewers, flat and wide-shaped satay skewers. Its wider surface allows minced meat to attach more easily. The term twisting in Balinese and Indonesian means "lilit", which is appropriate for the way this satay is made.
